Elise Cooke PictureElise Cooke starved in college. Seriously, some mornings she woke up not sure how she'd eat that day. Resolving never, ever to be that broke again, she and her equally-poor husband worked hard, scrimped and saved, to put away funds to see them through the inevitable rainy days. Now they live in Northern California and have three constantly-eating and growing-out-of-everything kids, which they can thankfully still afford, due to frugal living.

Elise started Simpleton Solutions in 2008 after a year of mulling over The Congressional Food Challenge. Members of Congress "tried" to eat for a week at the Food Stamp rate, failing spectacularly, and calling for more money so that the poor could eat healthfully. Well, Elise's family of five was eating for about half of that rate, and very nutritiously, too. So where were all the Letters to the Editor from other home economists to set the record straight? After much nagging from her husband, Elise wrote her first, highly-acclaimed book, and started this website, to encourage thrift and creative frugality.
